Chimney Stax specializes in a baked treat new to Toronto. Owners Matthew Lindzon and Zach Fiksel based their food trucks cuisine off of the Eastern European chimney cake. After the duo discovered the popular chimney stacks trend hadn’t yet spread to Toronto they knew they had found something special.

Get to know Chimney Stax owners Matthew Lindzon and Zach Fiksel and learn how they found themselves with the first food truck to offer sweet and savoury chimney cakes in Canada.

Where are you from?

Toronto, born and raised.

Why did you decide to open a food truck? 

We felt that Chimney Stax were such a unique product that we wanted to be able to share them with as many people and at as many events as possible, as apposed to being stuck in a single location.

Where did you learn how to make this particular cuisine?

Given the traditional nature of the cuisine, we worked with a Hungarian Baker in Windsor Ontario, who was making the same product and learned her process, recipes and technique. We have worked hard to innovate and create new toppings, flavours, dips and fillings, all while maintaining traditional methods and recipes.

Do you have a favourite item on your menu?

I love our Cheesy Garlic Stax. It’s the perfect balance of warm gooey dough on the inside and crispy/crunchy cheesy crust on the outside. On its own it makes the best snack on the streets of Toronto.

I’m also a big fan of our original sweet Cin-Ful Stax, which is covered in cinnamon and sugar and served with a Cream Cheese Icing. It is the original stax that I had when I feel in love with the product, and it’s still my favourite when I am feeling like a sweet treat.

What’s one thing the city should do to make life easier for food truck owners?

Having dedicated spots around the city would really help make things easier for trucks. Currently trucks need to be at their spots early to make sure they are set for lunch service.

If you get to a spot late, you run the risk of a car being parked there or a courier van on delivery, and it can ruin your day. Having dedicated spots only for food trucks, with a schedule run by the City of Toronto, or a self-regulated organization like the Toronto Food Truck Association, would really make things easier.

What advice do you have for aspiring food truck owners?

It is a lot of hard work, and being a good cook/chef with a great product or fusion dish is great, but there is so much more that comes with running a truck instead of a restaurant.

You need to be quick on your toes, and a bit of a ‘McGyver’ – there is so much that can go wrong in a truck that doesn’t happen in a restaurant, and breakdowns can be very costly.

What’s your favourite food truck (other then your own)?

We are big fans of the CORNehCOPIA truck. They offer really simple delicious corn based dishes and who doesn’t love a traditional roasted corn on the cob!
